Tofu Lettuce Wraps with Fresh Herbs and Peanut Sauce

Ingredient List

For the Sauce:
1/2 cup soy sauce
1/2 cup peanut butter
1/2 cup honey
1 tablespoon ground ginger
1/4 cup lime juice
1/4 cup water
1 teaspoon red chili flakes, or more if desired (optional)

For the Wraps:
3 tablespoons vegetable oil
12 ounces extra firm tofu, cut into 1-inch cubes
12 green leaf lettuce leaves
1/2 English cucumber, cut into 1/2-inch x 2-inch strips
1 large carrot, cut into 1/4-inch matchsticks
2 tablespoons chopped roasted peanuts
2 tablespoons fresh mint leaves
2 tablespoons fresh cilantro leaves
salt to taste

Preparation Instructions

In a medium bowl, whisk together the soy sauce, peanut butter, honey, ginger, lime juice, water, and chili flakes until well incorporated. Set aside to marinate.

Place a large skillet over medium-high heat. Season the tofu with salt. Add the oil to the pan followed by the tofu and cook until browned and crispy on all sides, about 7 minutes.

Place an even amount of the cucumber, carrot, peanuts, mint, and cilantro leaves in the middle of each lettuce leaf followed by the tofu. Sprinkle with salt and drizzle each wrap with the peanut sauce. Transfer any remaining peanut sauce to a bowl for dipping, then serve.

Serves 4.
