Summer Salad

When the garden starts producing lots of cucumbers and tomatoes, chill out with this quick and tasty salad. It makes a great side, or take it to work for lunch!

How Do You Make It?

Ingredient List

1 large cucumber
2 medium tomatoes
1 can (15.5 oz.) chick peas
12 green olives
4 cloves garlic, crushed
3 tablespoons lemon juice
1 tablespoon olive brine
1 tablespoon olive oil
1/2 teaspoon onion powder
1/4 teaspoon white pepper

Preparation Instructions

1. Wash and trim cucumber. Quarter lengthwise and cut into bite-sized pieces about 1/2 inch thick. Place in a large bowl.
2. Wash and halve tomatoes, then cut into small chunks. Add to bowl.
3. Rinse and drain the chick peas. Add to bowl.
4. Slice the green olive. Add to bowl.
5. In a small bowl, combine remaining ingredients for the dressing. Combine well with a fork. Pour over salad and toss to coat.

Two servings.
