Ingredient List

For the Ice Cream:
1 vanilla bean
2 dates
2 cups coconut milk
¼ cup chia seeds
½ teaspoon lemon juice
2 tablespoons agave nectar, brown rice syrup, or honey

For the Cherry Swirl:
2 tablespoons Bing cherry juice
1 tablespoon honey

Preparation Instructions

1. Cut the vanilla bean lengthwise and scrape out the seeds. Place in the blender with the dates, coconut milk, and chia seeds and let sit for 20 minutes.

2. Add the remaining ingredients and blend at high speed until creamy. Place in the freezer for at least 30 minutes while you prepare the swirl.

3. Stir the cherry juice and honey together until combined. Pour into the ice cream and freeze for about 2 hours, stirring gently a few times to incorporate while retaining the swirl.

4. Let thaw for 10 to 15 minutes to soften a bit before eating.
