Moroccan Spiced Lentils with Rice

Ingredient List

2 tablespoons vegetable oil, divided
1 1/2 cup white rice
3 cups water
1 onion, small diced
3 cloves garlic, minced
2 teaspoons cumin
3 teaspoons paprika
2 teaspoons ground ginger
1 teaspoon cayenne (optional)
2 Roma tomatoes, cored and small diced
2 cups lentils
2 quarts vegetable broth
1/4 cup chopped fresh parsley
salt and pepper to taste

Preparation Instructions

Place a large saucepan over medium heat. Add 1 tablespoon of oil followed by the rice and cook, stirring frequently until the rice becomes opaque, about 5 minutes. Pour in the water and season with salt, then bring to a boil. Reduce to a simmer, cover, and allow to cook for 15 minutes. Remove the rice from the heat and allow to sit for 5 minutes more. Fluff the rice with a fork.

While the rice is cooking, place another large saucepan over medium heat. Add the remaining 1 tablespoon of oil followed by the onion and cook until tender. Add the garlic, cumin, paprika, ginger, and cayenne and cook for 1 minute more, stirring frequently. Add the tomatoes, lentils, broth, salt, and pepper, then bring to a boil. Reduce the heat to a simmer and cook until the lentils are tender, about 20 minutes. Spoon the lentils over rice, sprinkle with parsley, and serve.
